Well, I hope everyone had a nice St. Patrick’s Day, and that those of you who drink didn’t get too hammered and do anything stupid. I took the opportunity to try out a new recipe for some pistachio cookies, available at http://www.kingarthurflour.com/recipes/st-pats-pistachio-cookies-recipe. They turned out well, and while they lack the rich, buttery texture of the pistachio shortbread cookies I usually make, they require much less work and still have a nice pistachio taste to them.
