December 31st, 2009 This post is long overdue, but better late than never, especially since this was, by far, the best concert that I’ve ever been to.
After taking far too many pictures at concerts using my phone’s camera, I finally took the plunge and purchased a new semi-compact with F2.0 wide angle lens, which arrived just in time for this concert back at the end of July and the family trip down the Pacific Coast.
December 6th, 2009 On Friday, I had the opportunity to attend BYU’s final performance of Children of Eden with a date. It was an amazing musical, and I was glad to be able to see it. My date and I were both grateful that our knowledge of our Heavenly Father extends beyond that which is found in the Old Testament. It would be so depressing to think that God no longer spoke to His children, or that there would be no way to experience His love for us until we returned home upon our deaths. As beautiful as the musical was, it was even nicer to know the true nature of God’s love toward His children.
November 27th, 2009 Many of you have probably heard of the up-and-coming fad of Pie Wednesday, which is exactly what it sounds like – rather than waiting until after we’ve all stuff our pie holes with things other than pie, we bake as many pies as we possibly can the day before Thanksgiving, and immediately commence devouring them like a pack of starving hyenas. Because this results in a large number of pies being baked (and consumed) in a very sort span of time, it’s critical that there be a fair amount of variety among the selection of pies. No one wants to end up with dozen pumpkin and apple pies – unless, perhaps, you work at a bakery or grocery store. I chose to go with a Butterscotch Pear pie and a Raspberry Bavarian Cream pie, the latter inspired by a viewing of Julie & Julia while on a recent date. The pies that the others baked were even more amazing – this will definitely become a standing tradition, just as will the day-after-Thanksgiving airsoft war. I’ll post the recipes shortly.
November 24th, 2009 I’ve had a lot of fruit salads over the short span of my life – some were great, others not so much. Many of them, quite frankly, have contained more high-fructose corn syrup than actual fruit, which is a sad statement on American cuisine. The recipe I like to follow is simple, delicious, and equally elegant – enjoy!
Ingredients:
3–4 cups whipping cream, chilled
¼ cup confectioner’s or baker’s sugar (optional)
3 large apples, chilled
2 pears, chilled
4 almost-ripe bananas
2 pomegranates, de-seeded
Instructions:
- Combine cream and sugar if desired
- In a large bowl, whip the cream until it stiffens
- Wash, peel, core, and slice the apples and pears. Gently fold the pieces into the whipped cream.
- Peel and slice the bananas and gently fold into the mixture.
- Carefully fold the pomegranate seeds into the mixture, chill, and serve.
November 13th, 2009  Provolone Oregano Focaccia topped with Kalamata olives, chopped walnuts, and Parmesan and Asiago cheeses with a fresh mozzarella salad
A week ago, I invited a good friend to a bread bake which my cousin’s wife was hosting. While my friend wasn’t able to make it that night, she suggested that we make an attempt at focaccia, which we did last night. This is a slightly modified version of a recipe from King Arthur Flour. Feel free to substitute your own toppings to make it your own – it’s hard to go wrong with focaccia! The dough requires a lot of time to rise (1 hour and 55 minutes at room temperature), so hopefully you’re as fortunate as I am and have someone who’s willing to bake this with you! Enjoy!
